Köyceğiz Lagün Sisteminde Bulunan Mavi Yengeç (Callinectes Sapidus Rathbun, 1896)’in Bazı Morfometrik Özellikleri ile Et Kompozisyonu

Abstract

Bu araştırmada Köyceğiz Dalyanı’nda bulunan 200 adet Mavi Yengeç (Callinectes sapidus RATHBUN, 1896) populasyonunun morfometrik özellikleri araştırılmıştır.

Populasyonun et kompozisyonunu belirlemek amacıyla göğüs ve kıskaç etlerinde ham protein, yağ, ham kül ile nem oranları araştırılmıştır. Erkek bireylerin göğüs etinde ham proteinin yeterince yüksek olduğu(%15.54), dişi bireylerde ise ham külün biraz daha fazla olduğu (%2.38) belirlenmiştir. Yağ içeriğinin erkeklerin kıskaç etinde en düşük (%0.99) olduğu gözlemlenmiştir. Kıskaç etindeki protein içeriği erkek ve dişide birbirine hemen hemen eşdeğer içerikte bulunmuştur (%15.57 ve %15.60).

In this study the morphometric characteristics of the 200 blue crabs (Callinectes sapidus RATHBUN, 1896) which are found in Köyceğiz Lagoon System were investigated.

The raw protein, fat, raw ash and moisture contents at their thorax and crab meat were analysed to determine the meat composition of the population. It was determined that the raw protein in the chest meat of the male species is much higher (15.54%) than that of the female species whereas the raw ash in the female species was a little higher (2.38%) than in the male species. The fat content of the clamp meat in the male species was observed the lowest (0.99%). However the raw protein of the clamp meat in the both male and female species was found in the nearly equivalent content (15.57% and 15.60%).
